This bread is soft and mildly spicy . Green chilli paste can be added instead of red chilli flakes .

  • Prep: 1 hr
  • Cook: 30 mins

Ingredients

2 1/2 cups All purpose flour /Maida

1 1/8 tsp Instant dry yeast

1 tbsp Sugar

1/2 tsp Salt

3/4 cup Warm water

1 tbsp Oil

1 tbsp Fresh cream

1 tsp Red chilli flakes

1 tsp Black sesame seeds

1 tsp White sesame seeds

100 g Spinach leaves

Directions

1Wash and clean the leaves .

2Blanch it .

3Make a thick puree without adding water .

4In a bowl ,mix flour. sugar , instant dry yeast, fresh cream and salt .

5Mix it well .

6Add spinach puree and red chilli flakes .

7Mix it well .

8Add warm water .

9Knead well for 5-6 minutes .

10Add oil and knead for another 3-4 minutes .

11Shape it into a ball and transfer it into a well oiled bowl .

12Cover it with cling film .

13Let it double in size . Meanwhile roast the sesame seeds lightly . Keep it aside .Let it cool .

14Now punch down the dough gently .

15Knead gently for a minute or two .

16Roll it into rectangle .

17Roll it tightly .

18Shape it into a log .

19Transfer it into a loaf tin . I used 8" x 3.5" loaf tin . Apply water using a brush and sprinkle sesame seeds .

20Wait for the second rise . Meanwhile pre heat the oven at 180 degree C with top and the bottom rods on . Cover the loaf with an aluminum foil and bake for 25 -30 mins. Now take the loaf tin out and remove the aluminum foil . Butter/egg/milk wash using a brush . Place it back in the oven and bake for another 5-7 minutes until the top is brown .

21Transfer it to a wire rack and apply butter with a brush . Allow it to cool well at least for 3-4 hrs before slicing .

This looks delicious! Can I switch AP flour for whole wheat or multigrain flour?
