Pomelo orange sponge cake

A simple recipe and end result is truly delicious and soft.
Pomelo and orange add a citrusy flavour to the cake.
This feather light sponge cake has a beautiful ,perfect texture.
It is oil free and butter free..

  • Cook: 20 mins

Ingredients

1 cup All purpose flour

1 cup Powdered sugar

3 Egg

10 tbsp Hot milk

2 tbsp Orange juice

1 tbsp Orange zest

3 tbsp Dry Pomelo

2 tsp Baking powder

Directions

1Pre heat the oven at 160°c . Prepare a cake tin . I used 11" × 7 1/2" rectangle cake tin . Cut the pomelo into small pieces . Separate the egg whites and yolks . Sift flour and baking powder thrice and keep aside . In a medium sized bowl beat egg whites along with 3/4 cup of powdered sugar until stiff . Keep it aside . In another bowl beat egg yolks with 1/4 cup sugar until it is pale yellow and almost stiff. Beat together beaten egg yolks and white together . Add orange juice and zest . Mix well. Add the flour mixture along with hot milk ,starting and ending with flour. Continue beating in moderate speed . Fold in chopped pomelo . Transfer the batter into the prepared baking tin . Bake at 160°c for 18 -20 minutes or until done .

Notes..
All the ingredients used must be room temperature .
Egg whites should be beaten stiff and shiny .
Gently fold in flour and hot milk .

You have mentioned all ingredients at room temperature, but hot milk. Is the milk boiled and cooled down, or the milk is hot.
