Malva Pudding

Ingredients

1 1/2 cup All purpose flour/ Maida

1 tsp Baking soda

2 Egg

3/4 cup Castor sugar

2 1/2 tbsp Butter

2 tbsp Apricot jam

1/2 cup Milk

1 tbsp White vinegar

For the sauce

1 cup Fresh cream

75 g Sugar

90 g Butter

2 tbsp Red wine/ Brandy/Orange juice

Directions

1Sift the flour and baking soda thrice. Pre heat the oven at 150 degrees C for 10 mins.

2Heat milk and butter on low flame. Turn off the heat.Add vinegar.

3Keep it aside.

4Beat eggs and sugar well.

5Add apricot jam. Continue beating.

6Fold in sifted flour.

7Add the milk mixture.

8Gently fold in using a spatula.

10Cover the baking pan with aluminium foil.

11Bake at 150 degrees C for 35- 40 mins.

12Meanwhile let us prepare the sauce.

13In a heavy bottom sauce pan , heat milk, fresh cream and sugar on low heat.

14Turn off the heat. Let it cool well. Now add red wine/ brandy/ orange juice. Keep it aside.

15After 30 minutes of baking,remove the baking pan from the oven.Remove the aluminium foil.Discard the foil and place it back into the oven. Bake for until the top is golden brown in colour.

16Remove from the oven.Pour the prepared sauce on top. Let it soak well.

17Serve hot with custard or vanilla ice cream.
