2Pre heat the oven at 150 degrees C.
3Grease and dust a 6” aluminium pan.
4Sift the dry ingredients thrice.
5Cream butter and sugar.
6Add lemon zest and cardamom powder .
7Add lightly beaten egg.
8Gently fold in flour and buttermilk.
9Add lemon juice.
10Fold in toasted coconut gently.
11Transfer the batter to the prepared tin.
12Bake at 150 degrees C for 35-40 minutes or until done.
