2Line rectangular baking tin with parchment sheet. Slice the tomatoes, Onion, garlic and ginger finely. Drizzle 2 tbsp oil on top. Add 1/2 tsp salt and pepper. Pre heat the oven at 140 degrees C. Turn on the grill mode. Place the tin in the oven.Roast them until the tomatoes are soft.
3Turn of the oven. Let the tomatoes cool well.
4Heat a heavy bottom pan saucepan. Add 2 tbsp oil. Add shredded chicken and chopped mushrooms. Sauté for a minute on low flame.
5Add the chicken broth and Basil leaves. Let it boil.
6Blend the roasted tomatoes and rest of the ingredients well. Pass the liquid through a metal strainer. Add this to the chicken broth.
7Continue to boil . Add salt . Let it simmer for 5 minutes on low flame. Turn off the heat. Serve hot.
