1In a bowl, mix all the ingredients together except oil.
2Knead the dough for 6 minutes until the dough is smooth , elastic and shiny.
3Now add 1tbsp oil. Knead again for 4-5 minutes.
4Shape the dough into a ball and place it into a well oiled bowl. Cover the bowl with cling film. Let the dough double in volume.
5Meanwhile let us prepare the masala/ flavouring.
6In a small glass bowl, mix all the ingredients together. Microwave it for a minute or two. Keep it aside.
7Now, check the dough. The dough should double in volume. Punch the dough gently. Knead for a minute or two. Now add the prepared masala. Knead for 2-3 minutes.
8This is the basic recipe for curry leaf bread. You can shape it into a loaf/ bun / pull apart bread.
9Prepare a loaf tin. I’m using 8”x 4”x 4” .Shape the dough into a loaf. Place the dough into the prepared bread tin. Cover the tin with cling film.Let it proof. The dough should reach till 1” below the rim of the tin.
10Make a tent with aluminium foil and cover the tin.
11Pre heat the oven at 180 degrees C.
12Place the tin in the oven. Bake for 25 minutes.
13Now take the tin out of the oven. Discard the aluminium foil. Egg wash the bread well .
14Place the tin back into the oven. Bake for 5-6 minutes until the crust is golden brown.
15Take the bread out of the tin. Apply butter liberally. Allow the bread to cool well before slicing.
