Spicy bread sticks

Ingredients

2 cup All purpose flour/maida

3/4 tsp Instant dry yeast

1 tbsp Sugar

3 tbsp Olive oil

11 tbsp Water

3/4 tsp Salt

1 tbsp Garlic paste

1/2 tbsp Red chilli flakes

1 tbsp Oil

Directions

1In a bowl , mix flour,yeast ,sugar and salt.

2Mix well .

3Add water and knead well for 6-7 mins . Now add oil .

4Knead for another 4-5 mins. Dough will be stiff . Do not add water .

5Apply oil and place it in a well oiled bowl .

6Cover it with cling film and let it rise.

7Meanwhile let us prepare the flavouring . In a small bowl ,heat garlic paste ,red chilli flakes and oil . Keep it aside .

8Let the dough double in volume .

9Gently knock down the air .

10Knead for a minute or two . Add the flavouring and knead for a minute . Cover it with cling film and store it in an air tight container. Refrigerate it for atleast 4-5 hrs .

11Divide the dough into four equal portions .

12Roll out the dough as shown in the pic .

13Cut it into equal sized strips .

14Apply milk / water . Sprinkle sesame seeds or basil seeds . Line a rectangle tin with parchment paper. Carefully transfer it to the baking tin .

15Egg wash or milk wash the strips . Let it proof for 8-10 mins . Pre heat the oven at 160 degree C with both top and bottom rods on . Bake for 6-7 mins and then reduce the temperature to 150 degree C . Bake for another 2-3 mins until it is golden brown in colour .

16Remove from oven and cool on a wire rack .

If you prefer crispy bread sticks, then roll out the dough thin ..about 1/4 " thickness .

It is always better to refrigerate the dough before rolling and shaping . It is very difficult to roll a freshly risen dough because it will very elastic and bouncy .

The dough can be refrigerated up to four days .

Baking time depends upon the thickness of the strips .If you roll the dough very thin , the baking time will also reduce .

Yes ..you can use active dry yeast instead of instant dry yeast..Take double the quantity..
