1Heat a saucepan,add 2 tbsp of oil. Fry onion and garlic lightly. Add chopped red chillies and green peas.Cook it for 2-3 minutes.Keep stirring.Add salt .Turn off the heat. Keep it aside.
2Pre heat the oven at 150 degrees C with top and bottom rods on.
3Line a loaf tin with parchment sheet.
4Sift the self raising flour thrice.
5Keep all the vegetables ready.
6In a bowl mix egg , milk and oil.
7Beat it gently using a electric mixer.
8Now using a spatula, gently mix the wet and the dry ingredients. Add yogurt.
9Do not stir.Use cut and fold method.
10Now add the prepared vegetables ,grated carrots and sweet potatoes.
11Transfer it to the prepared tin.
12Bake of 40-50 mins or until done.
13Take the loaf out and spread chopped cheddar cheese and mint leaves. Bake it for 2-3 minutes.
14Remove from the oven and allow it to cool very well before slicing.
