For the topping
1Pre heat the oven at 200 degrees C for 10 mins. Wash and clean the tomatoes.Drizzle olive oil and add salt.
2Bake for 18-20 mins.Turn off the oven.Keep it aside.
For the dough
1Mix all the ingredients except oil and water.
3Add water and knead for 6 minutes.
4Now add 1 tbsp of oil.
5Knead for another 3-4 minutes.
6Shape it into a ball .Place it in a well oiled bowl.Cover it with cling film.Let it proof.
7Let it double in volume.
8Gently punch down the dough.
9Knead for another 2-3 minutes. Cover it with cling film and refrigerate.
For the sauce..
1Keep 3-4 roasted tomatoes aside for topping. Heat a saucepan, add oil .Add the onion paste . Sauté for a minute or two.Add the roasted tomatoes.Keep stirring.Add the chilli powder and Italian seasonings.Now add sugar ,salt sliced mushroom and tomato paste.Add water. Cook for 3-4 minutes. Turn off the heat.Keep it aside.
1Heat chopped garlic and oil in microwave for a minute. Now add Italian seasoning.Heat for 30 sec.Keep it aside.
2Line a aluminium tin with parchment sheet.You can use any aluminium tin of your choice.
3Take around 125 gms of dough. Divide it into small pieces each weighing around 3 gms.
4Dip it in garlic oil.
5Neatly arrange the dough in the prepared tin.
6Pre heat the oven at 180 degrees C for 10 minutes.
7Place it in the oven and bake for 8-10 minutes with both top and bottom rods on.
8Now take it out.Apply garlic oil with a brush.
9Add the toppings and cheddar cheese.
10Bake for 8-10 minutes.
11Take the pizza out and evenly spread mozzarella cheese , roasted tomatoes and chopped spring onion . Place it back in the oven and bake for 2-3 minute.
