1Grease and dust a 6” aluminium pan. Sift flour, baking powder and baking soda thrice. Pre heat the oven at 150 degrees C.
2In a heavy bottom saucepan, cook 1/3 cup of chopped pineapple, 1tbsp of water and 1 tbsp of sugar on low flame for 2 minutes. Turn off the heat.Keep it aside. Let it cool.
3Cream butter and sugar well.
4Add gently beaten egg.Cream well.
5Fold in the sifted ingredients and water.
6Do not stir the batter. Add a drop of yellow food colour. Mix very gently. Follow cut and fold method while mixing.
7Now very gently fold in the ground pistachios and pineapple.
8Transfer ithe batter into the prepared tin.
9Bake for 30 minutes at 150 degrees C or until done.
