1Pre heat the oven at 140 degrees C. Grease and dust a 11”x 7 1/2” aluminium tin.
2Sift flour, cinnamon powder, nutmeg powder, salt ,baking powder and baking soda thrice.
3Keep the pistachio ready.
4Separate the egg whites and yolk.
5Powder the granulated sugar and sift it twice.
6Beat the egg whites using a electric mixer.Add 4 tbsp of powdered sugar. Beat it until the egg whites are stiff. Keep it aside.
7In another bowl, beat the egg yolks. Add the orange juice and rest of the powdered sugar until the yolks are pale yellow in colour and almost stiff.
8Using a spatula, gently fold in the flour, powdered pistachios, orange zest, vanilla essence and water.
9Now gently fold in the beaten egg whites.
10Transfer it to the prepared tin.
11Bake for 14 - 15 mins at 140 degrees C or until done.
