Moist Carrot Cake..

Ingredients

130 g All purpose flour/Maida

1 tsp Baking powder

1/4 tsp Baking soda

1 tsp Nutmeg powder

1/2 tsp Salt

130 g Grated carrot

2 Eggs

150 g Granulated sugar

1/2 cup Refined oil

Directions

1Pre heat the oven at 150 degrees C. Sift flour, salt, nutmeg powder, baking powder and baking soda thrice. Grease and dust a 8” aluminium tin.

2Beat eggs and sugar well.

3Add oil. Beat well using a hand mixer.

4Add the sifted ingredients and gently fold in the grated carrots.

5Transfer into the prepared tin.

6Bake at 150 degrees C for 35-40 minutes or until done.
