Mixed berry tea cake flavoured with orange zest and orange juice..

This moist and soft tea cake has a lovely crumb and texture . Cream cheese and orange zest further enhances the flavour of the cake...

1Grease and dust a 6" round cake tin . Chop the berries and keep it aside . Separate the egg whites and yolks . Pre heat the oven at 160 degree C with both and bottom rods on .
2Beat the egg whites until stiff and keep it aside . Beat the egg yolks lightly . Sift the dry ingredients thrice .
3Cream butter and orange zest well . Add powdered sugar. Beat well . Add cream cheese .Continue beating in low speed . Add lightly beaten egg yolks .
4Using a spatula , gently fold in flour ,orange juice and water ,starting and ending with flour . Do not over mix or stir .
5Now fold in egg whites and chopped berries . Transfer it to the prepared cake tin and bake at 160 degree C for 35 minutes or until done .
All the ingredients should be at room ingredients . Do not over mix the batter or stir the batter .
