Mango Coconut Butter Cake

125 g All purpose flour/ Maida

1/2 tsp Baking powder

125 g Granulated sugar

100 g Salted butter

1 Egg

1/3 cup Mango pieces

3 tbsp Coconut milk

4 tbsp Toasted Coconut

1 1/2 tsp Lemon juice


1Pre heat the oven at 150 degrees C.

2Grease and dust a 6” aluminium tin.

3Sift the flour and baking soda thrice.

4Keep all the other ingredients ready.

7Use thick coconut milk.

8Cream butter and sugar well. Add gently beaten egg.

9Fold in sifted flour, coconut milk and lemon juice.

10Add 2-3 tbsp of water if the batter is too thick.

11Now gently fold in the mango pieces and coconut.

12A small drop of yellow colour can be added.

13Never over beat or stir the batter. Always follow cut and fold method.

14Place it in the oven.

15Bake for 35-40 minutes at 150 degrees C or until done.
