1In a bowl cream salted butter and sugar.
2Cream well until smooth and fluffy.
4Add flour, grapefruit zest and juice.
5Knead it gently. Add a tbsp of extra flour if required.
7Cling wrap and refrigerate the dough for 20 mins.
8Meanwhile coarsely grind the almond flakes , cinnamon and 1/2 tbsp of honey.
10Take around 1 tsp of cookie dough and shape it into a ball.
12Flatten the ball a bit and place 1 tsp of coarsely ground almond in the centre.
13Seal it well.
15Meanwhile line a rectangular baking tin with parchment sheet.Place the cookie dough and refrigerate it for 10 minutes.
16Pre heat the oven at 150 degrees C for 10 minutes and bake for 12-13 minutes.
17Transfer the baked cookies to a cooling rack .Let it cool.
18Store the cookies in a airtight container.
