Boiled Chocolate Raisin Cake

80 g Maida/All purpose flour

60 g Self raising flour

1/2 tsp Baking soda

160 g Raisin

3 tbsp Cocoa powder

1 tbsp Instant coffee powder

1 tsp Cinnamon powder

1/4 tsp Nutmeg powder

1/2 tsp Clove powder

1/8 tsp Salt

70 g Granulated sugar

40 g Brown sugar

125 g Salted butter

250 ml Hot water


1Pre heat the oven at 150 degrees C for 15 minutes.Line a 6” aluminium pan with parchment sheet. Sift all purpose flour, soda powder and self raising flour thrice.

2In a large heavy bottom saucepan , mix raisins, sugar,butter, salt, cinnamon powder, nutmeg, clove powder, cocoa, instant coffee powder and hot water.

3Turn on the heat and boil it for 6-7 minutes.Keep stirring.

4Turn off the heat.Allow it to cool for 4-5 minutes.

5Now gently fold in the sifted ingredients to the boiled mixture.

6Transfer the batter to the prepared tin.

7Bake for 45-50 minutes at 150 degrees C or until done.
