Apple Peanut Cookies

Ingredients

1 cup Coarsely ground Roasted peanuts

1 1/2 cup All purpose flour/Maida

1 tsp Baking soda

1/4 cup Salted butter

3/4 cup Brown sugar

1 Egg

3 tbsp Thick Apple purée

2 tsp Cinnamon powder

Directions

1Sift the flour and baking soda thrice.

2Pulse the roasted peanuts in a food processor for 2 minutes.

3Cream butter and sugar well. Add gently beaten egg.

4Add the sifted flour, cinnamon and coarsely ground peanuts.

5Now mix in apple purée gently .

7Knead for a minute and cling wrap the dough.

8Refrigerate for 30-40 minutes.

9Line a rectangular tin with parchment sheet.

10Take 1 tbsp of dough and shape into a ball.

11Flatten it gently and make a pattern on it using a fork.

12Refrigerate it again for 20 minutes.

13Meanwhile, pre heat the oven at 140 degrees C . Turn on the fan mode.

14Bake the cookies at 140 degrees C for 20-22 minutes.

15Transfer the cookies to a wire rack.Let it cool.
