1Chop the chocolate roughly into small pieces. I’m using 50 gms Of Lindt Excellence Caramel with a touch of sea salt. Transfer it into a medium sized bowl. Microwave the chocolate for 2-3 minutes.Turn off the heat . Keep it aside. Chop the raisins into small pieces.
2Sift the flour and baking powder thrice.
3Cream butter and sugar.
4Add the sifted ingredients.
5Add Amarula, melted chocolate and chopped raisins.Gently knead the dough of a minute or two.
6Cover the dough with cling film and refrigerate for 1 hour.
7Line a rectangular tin with parchment sheet.
8Take 1 tbsp of dough. Shape it into a ball. Flatten the top a bit.
9Transfer it to the prepared tin.
10Refrigerate for 30 minutes.
11Meanwhile pre heat the oven at 140 degrees C using the fan mode.
12Bake the cookies for 18-20 minutes.
13Remove the tin from the oven.
14Transfer them into a wire rack. Let it cool.
