Directions
1Keep your stand mixer ready. Transfer all the ingredients except egg and water into the bowl. Turn on the mixer. Let it mix well for a 2-3 minutes.
2Now add gently beaten egg and water. Knead for 8-10 minutes on medium speed.
3Add 3-4 tbsp of extra water if the dough is too stiff.
4Knead until the dough is smooth and shiny. Cover the bowl with a wet kitchen towel. Let the dough double in volume.
5Meanwhile take a pan. Lightly toast the walnuts on low flame. Wash and keep the raisins ready. Pulse both walnuts and raisins for a minute. Keep it aside.
6Check if the dough has risen in volume. Gently punch down the dough. Add the prepared walnuts and raisins. Knead for 2-3 minutes. Shape the dough into a loaf. Grease and dust a loaf tin. Transfer the dough into the loaf tin. Let it double in volume.
7Pre heat the oven at 180 degrees C. Bake for 30 minutes until the crust is golden brown in colour. Take the loaf out of the oven. Apply butter liberally.
