Directions
1In a heavy bottom saucepan, cook orange peel, finely grated ginger, 2tbsp sugar and 4 tbsp water on low flame. Add a drop of orange food colour.
2Cook for 3-4 minutes .
3Keep It aside.Let it cool well.
4Sift the dry ingredients thrice
5Cream butter and sugar well using an electric mixer.
6Add sifted flour and ground peanuts.
7Knead gently without applying pressure.Add 1 tbsp of water if the dough is too stiff.
8Now add the cooked ingredients.
9Knead the dough gently for a minute.
10Cover the dough with cling film and refrigerate for 30 minutes.
11Line a rectangular baking tin with aluminium foil.
12 Now take 1 tbsp of dough. Shape it into a ball. Make a small design in the center using a fork.
13Transfer the cookies into the prepared tin.
14Refrigerate it for 20 minutes.
15Meanwhile, pre heat the oven at 150 degrees C.
16Bake the cookies for 20- 22 minutes.
17Now, turn off the heat. Remove the cookies from the oven .
18Let it cool.
