This passion fruit icecream is smooth and silky .It is eggless and no condensed milk added .

Ingredients
For the custard
1 cupMilk
1/3 cupGranulated sugar
1 tbspCustard powder
For passion fruit compote
3/4 cupPassion fruit pulp
25 gSugar
Whipping cream
1/2 cupWhipping cream
Directions
For passion fruit compote
1Scoop out the pulp and pass it through a sieve to remove seeds . In a sauce pan mix the pulp and sugar well and heat it. Bring it to boil and let it simmer until it is thick . Turn the heat off and let it cool well . Keep it aside .
2Boil one cup (200ml) of milk in a saucepan.
Keep stirring .
3Let it simmer and reduce it to 3/4 cup .
4Mix 1 tbsp of custard powder in 1 tbsp water.
5Add the custard powder to the boiled milk and heat it for a minute or two .
6Let it thicken .
7Turn off the heat . Pass the custard through a fine strainer .Place the saucepan into a bowl of ice cold water.Let it cool .Cover it with cling film and refrigerate for 30 minutes.
8Keep 2 tbsp of passion fruit compote ready .
9Take 1/2 cup of whipping cream . Beat it until stiff.
10Add the cooled custard . Continue beating .
11Add passion fruit compote .
13Transfer it to a glass / plastic container.Cling wrap it .
