Directions
For the filling
1Heat a non stick pan, Add oil . Sauté all the ingredients except cheese.Add salt to taste. You can also add 1 tbsp of green chili sauce for extra flavour. Turn off the heat. Let it cool.
For the dough
1In a bowl mix apf, semolina,instant dry yeast, sugar and salt well.
2Add butter milk and knead the dough for 6 minutes.
3Add 1 tbsp of oil.Knead well for another 3-4 minutes.
4Shape the dough into a ball.
5Place it into a well oiled bowl.
6Cover it with cling film.
7Allow it to double in volume.
8Now punch down the risen dough gently.
9Using a rolling pin, roll the dough into rectangular shape.
10Once the dough a rolling pin, roll the dough into rectangular shape.
11Knead for a minute or two.
12Carefully spread the filling and grater cheese using a spatula and roll the dough tightly into a log.
13Now, using a sharp knife, divide the dough into 12 equal parts.
14Grease two muffin pans.
15Place each portion of the dough into the muffin pan.
16Let it proof.
17Pre heat the oven t 180 degrees C.
18Cover the muffin tin with aluminium foil.
19Place it into the oven and bake for 15 mins.
20Remove the tin from the oven.Discard the aluminium foil. Egg wash the dough.
21Place it back into the oven.
22Increase the temperature a bit.
23Bake until the crust is golden brown in colour.
24Remove the buns from the oven.
25Apply butter liberally.
26Remove the buns to a wire rack.
