Coconut Paprika Bread

Ingredients

2 1/2 cup All purpose flour/Maida

3 tbsp Coconut milk powder

3/4 tbsp Instant dry yeast

3/4 tbsp Sugar

2 tsp Salt

1/2 cup Thick Coconut milk

1/2 cup Water

1 Egg

2 tbsp Smoked paprika powder

3 tbsp Coriander leaves chopped

1 tbsp Refined oil

Directions

1In a bowl mix all the ingredients together except egg, oil and liquids.

2Mix all the ingredients together for 2-3 minutes.

3Now add gently beaten egg , water and coconut milk.

4Knead well for 6 minutes.

5Add 1 tbsp oil and knead for another 4 minutes until the dough is smooth and elastic.

6Shape the dough into a ball and place it in a well oiled bowl. Cover the bowl with cling film.

7Let it double in volume.

8Now punch the dough gently. Shape it into a loaf . Place it into a well greased loaf tin. Cover the tin with cling film. Let the dough rise until it reaches the rim of the loaf tin.

9Meanwhile, Pre heat the oven at 180 degrees C.

10Remove the cling film. Apply water or coconut milk on the dough using a silicone brush.

11Make a tent with aluminium foil and cover the tin.

12Bake for 25 minutes.

13Remove the tin from the oven. Remove the aluminium foil.

14Apply egg wash on the dough.

15Place it back into the oven.

16Bake for another 10 minutes or until the crust is golden brown.

17Remove the loaf from the tin. Apply butter liberally. Allow the loaf to cool well before slicing.
