1Pre heat the oven at 150 degrees C. Sift the flour and baking powder thrice. Grease and dust a 6” round baking tin or a small loaf tin. Grind the cherries into a smooth paste without adding water.
2Cream butter, lemon zest and sugar well.
3Beat the eggs gently and add it to the creamed mixture.
4Gently fold in flour, curd, water and cherry paste.
5Add a drop of pink colour if required.
6Do not stir the batter.
7Transfer the batter into the prepared tin.
8Bake at 150 degrees C for 35-40 minutes or until done.
