Directions
1Pre heat the oven at 200 degrees C. Line a rectangular tin with aluminium foil. Slice the pumpkin into thin pieces. Add 1 tbsp oil, salt and ground pepper.Bake for 40 minutes with top and bottom rods on.
2Remove it from the oven and keep it aside.Allow it to cool well.
3Grind it smooth without adding water.
4Now heat a thick bottom frying pan. Add 2 tbsp of oil. Add chopped onion.Fry well on low flame until it is lightly brown in colour. Add chopped red chillies and carrot . Turn off the heat. Add chopped spinach and salt.
5Sift flour, baking powder, baking soda and salt thrice. Pre heat the oven at 150 degree C with top and bottom rods on.
7In another bowl, whisk egg well. Add the rest of the ingredients except the flour mixture and water.
8Now gently fold in sifted flour mixture. Add water. Do not stir the batter. Fold it very gently.
10Bake for 20-25 minutes or until done.
