Directions
1Heat a heavy bottom saucepan. Add oil. Add chopped onion, chilli and garlic. Fry on low flame.Add the chopped vegetables. Keep stirring.Add salt.Turn off the heat. Add chopped coriander leaves.Keep it aside.
2Sift the flour and salt thrice. Pre heat the oven at 150 degrees with top and bottom rods on.
3Beat eggs well.Add oil. Continue beating.
4Gently fold in the dry ingredients and wet ingredients together. Add curd and pepper powder. Do not stir the batter.
5Add the cooked vegetables.
6Gently fold in cheddar cheese.
7Grease the muffin pan well. I am using small sized pans.
9Bake for 18-20 minutes or until done.
