Vanilla coffee cake with walnut

This soft and moist double layered cake is flavoured with coffee and vanilla .
I used Davidoff instant coffee for the coffee layer. Finely chopped
walnuts adds a beautiful flavour and texture to the cake .

Ingredients

1 cup All purpose flour

1 tsp Baking powder

100 g Butter

3/4 cup Powdered sugar

2 Egg

2 tbsp Milk

1 1/2 tsp Instant coffee powder

2 tsp Boiling water

2 tbsp Water

2 tbsp walnut ( chopped very fine )

1/2 tsp Vanilla essence

Directions

1Pre heat the oven at 170 degree C . Grease and dust a 6" round cake tin . Add instant coffee powder in boiling water . Separate egg whites and yolk . Beat the egg whites until stiff . Cream butter and sugar well. Add lightly beaten egg yolks. Gently fold in flour, milk and chopped walnuts . Divide the batter into two parts . Transfer one part of the batter to another bowl . Add vanilla essence and 2 tbsp of water and gently fold the batter . Divide the beaten egg whites into two equal parts. Add one part to the vanilla flavoured batter . Keep it aside. To the remaining batter, add coffee mixture . Gently fold in remaining egg whites . First transfer the coffee batter into the prepared baking tin . Gently level it with a spoon. Now spoon in vanilla batter gently . Bake at 170 degree C for 35 - 40 minutes or until done .

All the ingredients should be at room temperature.
It is always good to weigh the egg before baking . I have used two eggs here .
Each egg weigh around 57 gm with shell.
