Berry and Nut cake

Ingredients

125 g All purpose flour/ Maida

1/2 tsp Baking powder

115 g Salted butter

100 g Granulated sugar

40 g Mixed berry and nuts

3 g Orange zest

1 1/2 tbsp Orange juice

1/4 cup Warm milk

2 Eggs

Directions

1Pre heat the oven at 150 degrees C . Grease and dust a 6” pan. Chop the berries and nuts. I used dried cranberry, raisin, blueberries, cashew nut , hazelnut..

2Sift flour and baking powder thrice. Remove the pith using a knife and make a paste of orange peel.

3Powder granulated sugar and sift it thrice.

4In a bowl, cream butter and powdered sugar well . Add orange peel paste.

5Add gently beaten egg .

6Fold in sifted flour, milk and orange juice.

7Now gently fold in berries and nuts.

9The batter should be of dropping consistency.

10Now transfer the batter into the prepared pan.

11Bake for 35-40 mins until done.
